Each wildflower has its own characteristics and it is impossible to say what that certain aroma depends on, but the result is still extraordinary, especially in our areas.
It is almost always light in color, sometimes varies from straw yellow to amber and tends to maintain a creamier consistency and to crystallize more slowly. Its aroma is flowery and delicate, its flavor is rather sweet, so it lends itself well to cold preparations because it does not cover the other flavors.
It does not contain, like all other honeys, gluten therefore makes it usable without problems by people with celiac disease.
Precisely because it dissolves easily having a liquid consistency by nature, it is ideal for sweetening coffee, barley, tea, milk, yogurt to which it does not alter the taste and aroma, on the contrary, further enhances its characteristics.
